Extra virgin olive oil of the highest quality, stored in appropriate conditions, retains its properties and is suitable for consumption for at least 12 to 18 months after opening the can. Suitable storage conditions are: 1. Cool and dark place: Olive oil should be stored away from sources of heat and light, which may accelerate its oxidation process. 2. Tight closure: Close the can carefully after each use to limit contact of the oil with air. 3. Avoid moisture: Olive oil should be stored in a dry place as moisture may affect its quality. Since we sell our olive oil in 3l and 5l cans, we suggest pouring a smaller amount of olive oil for everyday use into a dark glass bottle, capping it carefully after each use and keeping the remaining oil in the can in appropriate conditions to ensure its freshness and quality for a longer time.
